Vege sausage salad & Tangy dressing

Now Now I know, I eat alot of quinoa, but thats becasue every second day I chose to eat vegetarian or Vegan, I find my body responds better , I feel lighter, more energetic & well just overall functional.

I know this has you wondering, why havn’t I made the switch? Well, basically because I am not ready to, I like meat and I figured why not enjoy the best of both worlds? besides there is no guarantee I will feel 100% every single day if I become totally vegan…
Anyways, maybe one day, it is a thought I have been contemplating regardless….

So for today’s lunch special we are looking at a vege sausage & tangy dressing warm veggie salad.

So you will need:

1 cup of cooked tri colour quinoa
2 vege sausages grilled
1/2 cup asparagus chopped & steamed
1/2 cup brocoli florets chopped & steamed
1 whole carrot sliced & steamed
4-5 minimatos sliced in half
A small bunch of corriender to mix through and garnish.
DRESSING:
1 whole lemon juiced
1 Teaspoon of Lemon infused olive oil
1 Teaspoon of balsamic vinegar
A sprinkle of chilli
A sprinkle of ginger
Mix it all up & let it sit.

For the salad, thorw all your ingredients in a bowl and give it a good toss to make sure evrything is nicely mixed & pour your dressing over.Enjoy xx.

What’s the crack??
So last night on instagram I posted a photo of my groceries and decided to write a post about it.
I generaly do groceries on sunday night & cook my meals or at least prep them for cooking through out the week.
Alot of people say that clean eating or healthy eating is expensive and so forth, but I don’t find it to be too bad, if I am consistent with my meals and knowing ahead what I will be eating that week. Now of course this comes at the price of eating the same meals almost everyday, but this does not bother me, I like it this way because it costs me less time in the kicthen & less money too. But I mean of course you can go ahead and vary your meals, just buy accordingly to your plan & so that way you are savfing, as well try and do groceries on days that there are more special, such as sunday nights, everything goes on special for me 🙂

So let’s begin, since it is becoming warmer salads have been the way to go for me and this week is no diffrent. Everyweek I try and come up with different combinations just so I keep things different and provide my followers with ideas for their own meals.
The list below is quiet extensive as I was missing a few items so i had to replenish them hence why the cost was a little higher, although generaly my groceries range from $60-$100 weekly, that being breakfast, snacks, lunch & dinner & deserts.

So in my trolley this week:

500 G Turkey breats
1Kg Free range chicken breast
6 Tuna cans(chilli, zesty vinnagrete, lemon & cracked pepper)
6 Free range eggs
6 Vege sausages

3 head of organic brocoli
2 bunches of asparagus
1 bag organic carrots
1 pack minimatos
1 pack avocado (3)
1 tube garlic
1 tube spicy soft avocado
1 bag baby spinach
2 bags baby kale
2 bags of rainbow salad
1 bag of rainbow stirfry
1 pack capsicums (3)
1 bunch coriender
1 Pack organic Granny smith apples
1 Pack of green seedless grapes
1 small pack medjool dates
1 pack macademia nuts
1 almond breeze almond milk
1 box white tea
1 pack 4 bean mix ( 4 small cans)
1 Can Organic chickpeas
1 Can Organic canellini beans
1 Can Organic red kidney beans
1 Bottle Organic coconut oil

That about sums up this weeks shop list, so you will have to stay tuned for what I will be creating for this weeks menu.
The total cost of this week was $150, of course there are other items included that need not be listed but I am sure you get the gist of how I plan & shop for my week.
Bare in mind I live at home with my parents, no I don’t find it hard to maintain my diet because I shop & cook for myself & I keep all my items in my own cupboard in the kicthen to avoid temptation.
